I had half a bottle of bargain BBQ sauce in my fridge that expired a year ago, which was fortunate because now I know how to make ridiculous BBQ sauce on the fly. I took the caramelized onions and garlic from the slow cooker and diced them into a paste and added to a saucepan with a couple of pats of melting butter. 3/4 C. of ketchup, couple of tbsp of dijon mustard, Worcestershire, molasses, teaspoon of sweet paprika, teaspoon of smoked paprika, salt, juice of half a lemon, 1/4 cup of apple cider vinegar, and the special ingredient, Santa Fe Ole Red Chile Honey (click for info). That shit is amazing. This is my first time cooking with it, and I’m probably just going to start drizzling it over everything. Wonderful, wonderful shit. Highly recommend. Made my sauce hot and sweet and savory flavory and ultimately delicious on my pulled pork. Served on a cracked wheat pub bun, with a farmers’ market ear of corn on the cob with butter and salt and cracked pepper. There was supposed to be some farmers’ market broccoli served with this shit, but when I got it home, it was totally covered in aphids or some horrible pest. I spent 15 minutes washing and soaking, and it was still totally infested. Heartbreak. This is my favorite. Danny, the head chef, likes to make recipes from the 30’s and 40’s, and while this recipe probably predates that era, it’s still right at home in his repertoire. He slices is lemon into paper-thin rounds and layers them, giving the pie just the slightest whiff of structure, but still maintaining its overall gooey element. A miracle of a fucking pie. Tart, sweet, crisp. And his pie crust? Legendary.
