Yellow tomato, red onion, lime mayo. Simple, elegant, divine. Little mixed greens salad with a few sliced beets and radishes, dressed in an apple vinaigrette. Aces.
092512: Dinner: Cornbread Waffles + Salad: cornbread batter (click for recipe approximation) + cheddar cheese shreds + green chile, cooked in a waffle maker. Topped with 2 farm eggs over medium and paprika. Salad: farmers’ market lettuce mix, raspberries, blueberries, goat cheese crumbles, avocado, sliced almonds, spinach, homemade balsamic fig dressing.
092012: Dinner: Grilled Chicken + Salad(s): Chicken: thin-sliced chicken breast, pan-seared in butter and olive oil, slathered with homemade basil + walnut pesto. Salad: Farmers’ market lettuce mix + chard + kale + spinach + a little iceberg lettuce, raspberries, avocado, sliced almonds, goat cheese crumbles, green onion slices, dressed in homemade balsamic fig dressing. Side of the most amazing raw salad in the world: corn right off the cob, torn basil, chunks of peaches, sea salt. Love it love it love it love this salad. Not pictured: 2 glasses of decent cab, 2 slices of batard bread with butter and salt.
091412: Dinner, Part II: Salad + Basil Lasagne: Salad: farmers’ market mixed lettuces + chard, strawberries, goat cheese crumbles, sliced purple scallions, chopped walnuts, homemade balsamic fig vinaigrette. Lasagne: homemade tomato sauce, ricotta + 1 farm egg + leftover homemade basil +walnut pesto, Tillamook Italian cheese shreds, basil ribbons, 3 oven-ready lasagne noodles, little goat cheese up top. Super Yum.

Not pictured, the yellow jacket hornet that kept buzzing around me and my food until I actually stabbed it with my fork and ended its life. A sad way to go. Sorry, mate.

082512: Dinner Out: On the run doing errands and such. Stopped at New Teriyaki and split one order of chicken teriyaki with my dude. That stuff on the side is “salad.” I love the chicken teriyaki here and thought maybe salad would be simple enough not to get too scary. The dressing, turns out, was mayo + soy sauce. I feel queasy even writing those words. No mayo on salad, ever. I don’t even care if that’s way mayo was invented. It can never be on salad in my presence again.

081812: Dinner at the cabin: We grilled chicken breasts and carne asada and had fajitas, more or less. One beef, one chicken, flour tortillas, shredded cheese, home made salsa and guacamole, black beans, red onions, cilantro, tomato. Salad on the side: mixed greens, Sweet Sue peach slices, Indigo Kumquat tomatoes, currant vinaigrette. Not pictured, 2 rolling rocks, and a handful of tortilla chips.
081612: Dinner, Part I: Salad: farmers’ market lettuce mix, yellow carrot matchsticks, feta crumbles, green onion slices, home made mustard balsamic vinaigrette, avocado, couple few red tomato scraps tossed in, plus, PLUS this awesome new cherry tomato I had never seen before: Indigo Kumquat (there is a whole one at the bottom of the pic). They are amazing little guys. Light apricot color on bottom, with a dusty purple crown. They were magnificent. They were bred to have the most antioxidants of any tomato. Genius.
